Awasetsuka takes two fluffy guimauve, made with lemon juice and lemon peels, and sandwiches a layer of dense lemon jelly made of freshly squeezed Hiroshima lemon juice. Not quite a Japanese confection and not quite western, Awasetsuka transcends the barriers of east and west.
