This traditional dashi from the famed udon restaurant, Chikara, has remained unchanged since the restaurant was founded in 1935. It uses rishiri kombu seaweed from Hokkaido, a blend of shaved bonito flakes from Kyoto, and light soy sauce from Tatsuno in Hyogo Prefecture. Full of natural umami, the dashi production recipe is passed from seasoned veteran to apprentice to ensure that their traditional techniques are thoroughly passed down. Chikara's dashi stock is not only perfect for udon and soba, but for a whole range of traditional Japanese cooking, like savory egg custard, rolled omelettes, seasoned steamed rice, and more.
