Umai de Gansu was created around 1950 as a way to use the delicious ground fish leftover during kamaboko fishcake production. Fried into a thin cake, their creation was named gansu, the Hiroshima-dialect form of "gozaimasu" (to be/to exist). Umai de Gansu literally means "it's delicious!" With 70 years of history, gansu remained a popular staple in Kure City and surrounding areas, and, thanks to a national PR campaign which began 15 years ago, gansu became known across Japan, leading to a huge rise in demand and popularity. Continuing to protect their legacy as the oldest gansu maker, Miyake's gansu is truly a product that represents Hiroshima.
