The Hiroshima BrandThe Hiroshima Brand system certifies particularly outstanding specialty products from Hiroshima and promotes them throughout Japan to improve their name recognition and boost sales, as well as improve the image of Hiroshima, thus aiming to vitalize the regional economy and promote more visitors to Hiroshima. Our Hiroshima Brand certification system was established in 2007, and as of April 2021, we have certified the 91 products.

 

 

 

 

Culinary Delights

A culmination of various urban functions, Hiroshima City is also an area blessed by bountiful nature and filled with fresh, seasonal food ingredients throughout the year. Here, we’ll introduce delicious Hiroshima Brand foods and confections popular in Hiroshima.

Our momiji manjū cake is shaped like a maple leaf, the Hiroshima prefectural flower and tree. We’ve taken our signature sweet red bean paste made with carefully selected red beans from Tokachi in Hokkaido, and spring water from Hiurayama, and baked it inside a light and fluffy but still moist and tender sponge cake. Momiji Manjū (smooth red bean paste)

Fujiiya Momiji Manju

The taste you expect from our light purple smooth red bean paste

Fujiiya has a proud history of over 90 years. Our momiji manjū are made with red beans from Hokkaido: we remove the outer skin from the beans before simmering and then strain them through a fine mesh to turn them into a pure paste. Light purple in color, our signature red bean paste comes from ensuring that not too much of the inner red bean skin is removed, preserving the natural flavors of the beans. The cake batter is made with fresh eggs from nearby local farms, and is baked in perfect balance with the red bean paste. The mellow sweetness of our red bean paste inside a fluffy cake: this is the traditional taste that our company will continue to create and preserve.

Yamadaya Momiji Manju

The refined flavor of traditional sarashi-an sweet red bean paste

Our momiji manjū are shaped like the maple leaves in Miyajima’s renowned Momiji-dani Park. We take our signature red bean paste, made by removing the outer skin of the bean and repeatedly soaking and simmering them, and baked it inside a rich sponge cake batter made with eggs. The tender cake outside and refined smooth red bean paste inside are proof that our momiji manjū are made with traditional techniques born of Miyajima, where momiji manjū began.

We’ve taken our chunky red bean paste, made with large red beans from Hokkaido, and wrapped it in flour-based dough before topping with domestically-grown walnuts. Tsurukame Monaka

Tsurukame Monaka

The perfectly balanced harmony of monaka wafers and refined red bean paste

Embossed with the characters for crane and turtle, traditional symbols of good fortune, our monaka are the perfect gift for celebrations. Originally created in the spirit of bringing joy to the people of Hiroshima in the wake of the atomic bombing, it remains a popular confection over 65 years later. The monaka wafer is made with glutinous rice grown in Hiroshima, and inside is one of two varieties of bean paste: chunky red bean made from dainagon red beans from Bicchu, or powdered green tea bean paste. Our monaka combines the unique crisp crunch and savory aroma of monaka wafers with perfectly sweetened and smooth bean paste. Seasonal selections are also available in the spring, fall, and winter.

New Tales of the Heike (Shin Heike Monogatari)

An elegant east-meets-west hybrid confection

Since its marketing in 1971 as a unique confection made of baumkuchen filled with sweet red bean paste, Shin-Heike Monogatari has become a nationally acclaimed hit. The visible rings where the confection has been cut represent the 12-layered ceremonial kimono of court ladies, and each box contains a mix of red bean paste and white bean paste fillings to represent two historical warring clans, the Taira and the Minamoto (also known as Heike and Genji): having both clans together in one box is our way of symbolizing peace. Refined sweet red bean paste meets light and luscious baumkuchen to create an elegant confection reminiscent of the masterpiece New Tale of the Heike (Shin-Heike Monogatari) by literary master Eiji Yoshikawa.
