The Hiroshima BrandThe Hiroshima Brand system certifies particularly outstanding specialty products from Hiroshima and promotes them throughout Japan to improve their name recognition and boost sales, as well as improve the image of Hiroshima, thus aiming to vitalize the regional economy and promote more visitors to Hiroshima. Our Hiroshima Brand certification system was established in 2007, and as of April 2021, we have certified the 91 products.

Rare Deluxe Shijimi Clams

These rare shijimi clams are raised only in the pure sands of the Ōtagawa River, where nutrient-rich water from the Chugoku mountains flows into the plankton-rich waters of the Seto Inland Sea. Their uniquely yellow shells attest to the freshness of the riverbed and their large meat make them hearty and filling, which is hard to say for other shijimi clams in Japan. Nutritious and beautiful, they make a great addition to all kinds of cuisine.

Kusatsu is the original home of oyster farming. Blessed by Ōtagawa River running through Hiroshima, the waters around Tsukunejima Island are perfect for fisheries. We select the largest and best oysters raised here for shipment, choosing only the most plump and meaty oysters with a sweet and rich taste. Plus, these oysters hardly shrink in size when heated, making them perfect for cooking. Renowned across the country, we also ship them to the Toyosu Market in Tokyo, where you can find the best ingredients from all over Japan.

Preservative and wax-free lemons good right down to the peel

Hiroshima Lemons boast the largest lemon yield in all of Japan. Grown in the temperate climes of Setouchi with plenty of sunlight, our lemons are nutritious, fragrant, and wonderfully refreshing. Akashū lemons are strictly selected and marked in red (aka) as outstanding (shū) for their beautiful shape and size. Preservatives and wax are not used whatsoever, ensuring safe lemons that can be used down to the peels. From October to December, Hiroshima Lemons are shipped out as fragrant green lemons, and from January to May, when lemons are in peak season, they are shipped out as juicy yellow lemons. June to July provide lemons that have been stored in special warehouses, and from July to September, our greenhouse-grown lemons hit the market, ensuring a year-round supply.

Using technology not available anywhere else in Japan to deliver delicious Hiroshima oysters year-round

We freeze our Hiroshima oysters in-house using our own nitrogen freezing process. Meaty and juicy, these plump oysters are characterized by their beautiful milky color. This unique nitrogen freezing process is only done here at Yamashita Suisan; freezing oysters with nitrogen reduces cell destruction seen in typical freezing processes because it freezes the oysters much faster (ultra-rapid freezing).
