Our rice vinegar uses 100% Hiroshima-grown rice and is brewed with delicious water in a fresh air environment. Characterized by its distinct umami and deep mellow flavor, we use low-mineral soft water (hardness 16) in our long and careful brewing process at the Otafuku Daiwa Factory, located in the rich natural surroundings of Daiwa-cho in Mihara City. Through a static fermentation method, we use forced aeration to brew a deeply savory vinegar that is then delivered to the hygienic main factory in Hiroshima City to replenish inventory. This rice vinegar can be used for a wide variety of dishes including sushi, pickles, simmered dishes, and even in drinks.
